Clovis Mild, the original four-pepper salsa from Jose Madrid, first made in 1989 for Zak's Restaurant in Zanesville, Ohio. Smooth and a little sweet. Heat scale: 3 out of 10.

Made from: California pear tomatoes, two dried red chiles, two green chiles, spices and vinegar, handcrafted by Jose Madrid Salsa. All natural.

Why we love it: An Ohio original with a lot of flavor and not much heat.
